Hello and Welcome Maryjane310,
When we welcome an iguana into our home it is a big change for them as well. Its a slow process that they have to get used to as well. They go through a kind of shock period when you first bring them home. They tend not to eat for a few days. You wrote you feed him fresh "veggies" everyday... can you tell me the kinds of veggies and anything else you are feeding. There is much online information that isn't proper information, so you have to be careful what "proper" information is.
What are the temperatures of where he is? Put the lights on and put a thermometer at the highist point he can reach to the light, then again at the lowist and let us know what they are. If they are to cold they won't eat and if they are to hot they won't eat. So its hard to figure out without knowing those exact temperatures.
Also the uvb light you mentioned, which kind is it? Could you take some photos of him and the cage and I will let you know if there is a reason he isn't eating with anything related to that type of care.
Hope to hear back soon....
